Easy Grilled Cheese Burrito

A delightful twist on the classic grilled cheese sandwich, combining cheesy goodness with savory beef wrapped in a soft tortilla.

  • 1 pound Ground Beef (or turkey/plant-based)
  • 1 packet Taco Seasoning
  • 2 cups Cooked White Rice (or brown rice/quinoa)
  • 1 cup Sour Cream (or yogurt/dairy-free alternative)
  • 1 cup Nacho Cheese Sauce (or homemade/vegan cheese)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Mozzarella Cheese (optional)
  • 1 tablespoon Chipotle Sauce
  • 4 large Flour Tortillas (or whole wheat/gluten-free)
  • 2 tablespoons Butter or Oil (or olive oil/non-stick spray)

Instructions

  1. In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.
  2. Stir in the taco seasoning and cooked rice. Mix well and let it cook for another 5 minutes until heated through.
  3. In a separate bowl, mix the sour cream, nacho cheese sauce, cheddar cheese, and mozzarella cheese. Add chipotle sauce for a spicy kick.
  4. Lay a tortilla on a flat surface. Spread a portion of the meat and rice mixture down the center of the tortilla and top with the cheese mixture.
  5. Fold in the sides of the tortilla and roll it tightly from the bottom up. Repeat for the remaining tortillas.
  6. In the same skillet, add butter or oil. Place the burritos seam side down and cook until golden brown and crispy, about 3-4 minutes per side.
  7. Remove from the skillet, slice in half, and serve warm with your favorite toppings.

Notes

These burritos can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
