Italian Ground Turkey & Veggie Skillet

A hearty and healthy skillet dish packed with ground turkey and colorful veggies, perfect for busy weeknights.

  • lb ground turkey
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp chili powder
  • 1 tsp oregano
  • ½ tsp paprika
  • 1 tsp onion powder
  • ½ tsp basil
  • 2 tsp garlic
  • ½ yellow onion, chopped
  • 2 zucchini, chopped
  • 2 bell peppers, chopped
  • 1 tsp garlic salt
  • ½ tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ tsp basil
  • ½ tsp chili powder
  • ¼ tsp paprika
  • 6 oz. tomato paste
  • ½ cup water

Instructions

  1. Heat a large saucepan over medium/high heat, brown the ground turkey, and drain any excess water or fat.
  2. Add the turkey seasonings and stir well to combine, then remove from the pan and set aside.
  3. Drizzle 1 tablespoon of olive oil in the pan, then add the onion and garlic. Cook for about 3 minutes, or until fragrant.
  4. Add the zucchini and bell peppers. Cook for 2 to 3 minutes before adding the veggie seasonings. Continue to cook until the veggies are at your desired doneness, about 5 additional minutes.
  5. Return the ground turkey to the skillet, reduce the heat to medium/low. Stir in the tomato paste and water. Mix well and let simmer for about 5 minutes before serving.

Notes

Serve topped with parmesan cheese for extra flavor. Pairs well with garlic bread or rice.
