Italian Sausage and Cheese Tortellini Soup

A quick and creamy soup made with Italian sausage, cheese tortellini, and fresh spinach, perfect for warming up on a cold day.

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 cups cheese tortellini
  • 1 cup spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Pour in the chicken broth and add the diced tomatoes. Bring to a simmer.
  4. Stir in the heavy cream and bring back to a gentle simmer.
  5. Add the cheese tortellini and cook according to package instructions until tender.
  6. Stir in the spinach and cook until wilted.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with grated Parmesan cheese.

Notes

For a lighter version, swap cream for half-and-half or use a milk-broth mix. Brown the sausage well for added flavor.
