Juicy Grilled California Avocado Chicken

A simple yet flavorful grilled chicken recipe featuring a bright marinade and creamy avocado.

  • 2 chicken breasts
  • 1 ripe avocado
  • 2 medium tomatoes
  • 1 lime (juiced)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Mix lime juice, olive oil, cumin, chili powder, salt, and pepper in a bowl to create a marinade.
  2. Add chicken breasts to the marinade and let them sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for about 6-7 minutes on each side or until cooked through.
  5. While the chicken is grilling, chop the avocado and tomatoes.
  6. Once the chicken is done, let it rest for a few minutes, then slice it.
  7. Serve the grilled chicken topped with sliced avocado and fresh tomatoes.
  8. Garnish with cilantro if desired.

Notes

For best results, marinate the chicken for at least thirty minutes. Slicing avocado just before serving keeps it fresh.
