Classic Mac and Cheese

A warm and comforting mac and cheese recipe that brings back family memories.

Ingredients

  • 2 cups elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, to taste

Instructions

  1. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  2. In the same pot, melt the butter over medium heat.
  3. Add the flour, whisking continuously to form a roux.
  4. Slowly pour in the milk, whisking until smooth and thickened.
  5. Stir in the cheddar and mozzarella until melted.
  6. Combine the cheese sauce with the cooked macaroni.
  7. If desired, transfer to a baking dish, sprinkle some extra cheese on top, and bake at 350°F for about 20 minutes.

Notes

For added flavor, toss in some cooked bacon or sautéed onions. Experiment with different cheeses for a tasty twist.
