Meal Prep Ground Beef Teriyaki

A quick and nutritious one-pan meal featuring ground beef and vibrant veggies in a savory teriyaki sauce, perfect for meal prep.

  • 1 lb ground beef
  • 1/4 cup soy sauce
  • 1/4 cup teriyaki sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon sesame oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 2 cups cooked rice

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Drain excess fat and stir in garlic, ginger, soy sauce, teriyaki sauce, and brown sugar.
  4. Add broccoli and red bell pepper, cooking until veggies are tender.
  5. Divide cooked rice into meal prep containers and top with the beef teriyaki mixture.
  6. Allow to cool before sealing containers.
  7. Store in the refrigerator or freezer for easy meal prep.

Notes

For an extra touch, serve with sesame seeds or chopped green onions. Use leaner ground beef to reduce fat content and feel free to add more veggies for a nutritional boost.
