A quick and healthy Mediterranean Baked Fish featuring fresh flavors of olive oil, lemon, garlic, and herbs, perfect for weeknight dinners.

  • 2 whole fish (e.g., snapper or sea bass)
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup olives (e.g., Kalamata, sliced)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the fish on a baking sheet lined with parchment paper.
  3. Drizzle olive oil over the fish and rub in minced garlic, oregano, salt, and pepper.
  4. Stuff the fish with lemon slices and arrange cherry tomatoes and olives around them.
  5. Bake in the preheated oven for 20-25 minutes or until the fish flakes easily with a fork.
  6. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently before serving.
