Mediterranean Chicken Tenders

Quick and flavorful chicken tenders marinated in olive oil, garlic, lemon juice, oregano, and paprika. Perfect for weeknight meals.

  • 1 lb chicken tenders (trimmed and ready to cook)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper
  • Fresh parsley (chopped)
  • Lemon wedges (for serving)

Instructions

  1. Pat the chicken tenders dry and trim any fat.
  2. In a small bowl, stir olive oil, minced garlic, lemon juice, oregano, paprika, salt, and pepper.
  3. Coat the chicken tenders with the mixture. Let rest 5–10 minutes if you can.
  4. Heat the skillet over medium heat and add a small splash of olive oil.
  5. Place tenders in the skillet without crowding. Cook 5–7 minutes per side until golden and cooked through.
  6. Drizzle with extra lemon juice and sprinkle chopped parsley before serving.
  7. Serve with lemon wedges on the side.

Notes

Leftovers can be reheated gently in a skillet or microwave and are great for wraps or grain bowls.
