  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup chickpeas, drained and rinsed
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the steak to your desired level of doneness, then let rest before slicing.
  2. In a large bowl, combine cooked brown rice or quinoa, cherry tomatoes, cucumber, red onion, and chickpeas.
  3. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  4. Toss gently to combine.
  5. Serve the vegetable mixture in bowls, topped with sliced steak and crumbled feta cheese.
