Mexican Omelette

A quick and flavorful Mexican omelette packed with fresh veggies and gooey cheese, perfect for any meal of the day.

Ingredients

  • 2 large eggs
  • 1/4 cup bell peppers, diced
  • 1/4 cup onion, diced
  • 1/4 cup tomatoes, diced
  • 1/4 cup Mexican cheese blend
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Whisk the eggs with salt and pepper in a bowl.
  2. Heat olive oil in a skillet over medium heat.
  3. Add diced bell peppers and onions, and sauté until softened.
  4. Add tomatoes and cook for an additional minute.
  5. Pour the eggs into the skillet and cook until the edges start to set.
  6. Sprinkle the cheese on top and fold the omelette in half.
  7. Cook until the cheese is melted and the eggs are fully cooked.
  8. Garnish with fresh cilantro if desired, then serve.

Notes

Store leftovers in the refrigerator for up to 2 days. Reheat in the microwave for a quick breakfast.
