Mushroom Stuffed Chicken Breast

A delightful recipe combining tender chicken and a flavorful mushroom filling, perfect for family dinners or gatherings.

  • 4 chicken breasts
  • 1 cup mushrooms, chopped
  • 2 cloves garlic, minced
  • 1/2 cup cheese (e.g., cream cheese, mozzarella)
  • 1 tablespoon olive oil
  • 1 teaspoon dried herbs (e.g., thyme, oregano)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté the chopped mushrooms and minced garlic until soft.
  3. Remove from heat and mix in cheese and dried herbs.
  4. Cut a pocket in each chicken breast and stuff with the mushroom mixture.
  5. Season the outside of the chicken with salt and pepper.
  6. Place stuffed chicken breasts in a baking dish and bake for 25-30 minutes, until cooked through (internal temperature should reach 165°F or 74°C).
  7. Let rest for a few minutes before serving.

Notes

When cutting the pocket in the chicken, be careful not to cut all the way through to keep the filling intact. Ensure the mushrooms are cooked well to avoid excess moisture.
