Refreshing Orzo Salad

A vibrant and refreshing orzo salad packed with fresh veggies and a zesty dressing, perfect for summer picnics.

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions; drain and cool.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Make sure to cook the orzo just until al dente to avoid mushiness. Feel free to add any other veggies you have on hand, or toss in grilled chicken or chickpeas for a protein boost.
