Parmesan Crusted Chicken Sheet Pan Dinner

A hearty one-pan meal featuring seasoned chicken, crispy potatoes, and green beans, all with a delightful parmesan crust.

Ingredients

  • 1 1/2 lb chicken breast (about 34 pieces) (approx. 1 inch thick)
  • 2 T olive oil
  • 2 garlic cloves, minced
  • 1/3 c grated parmesan
  • 1/3 c breadcrumbs (Italian or plain, add 1 tsp Italian seasoning if using plain)
  • 1/2 tsp cracked pepper
  • 1/23/4 tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced
  • 2 T olive oil
  • 2 T grated parmesan
  • Salt and pepper to taste
  • 1 lb fresh green beans, ends trimmed
  • 1 T olive oil
  • 1 garlic clove, minced
  • 1 T parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F.
  2. Line a sheet pan with parchment paper or spray it with cooking oil.
  3. In a medium bowl, toss all ingredients for the potatoes together.
  4. Spread the potatoes on 1/3 of the pan and bake for about 10-15 minutes.
  5. While the potatoes cook, toss all ingredients for the chicken in the same bowl.
  6. Remove the pan with the potatoes and add the chicken.
  7. Mix the green beans in a bowl with olive oil, garlic, salt, and pepper.
  8. Add the green beans to the sheet pan.
  9. Bake everything for about 25 minutes, or until the chicken reaches an internal temperature of 165°F.
  10. For crispier potatoes, turn the oven to broil on high for 4-5 more minutes.
  11. Remove from the oven and let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
