  • 2 chicken breasts
  • 1 cup crushed pretzels
  • 1/2 cup flour
  • 2 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Dijon mustard
  • 1/4 cup mayonnaise
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow bowl, mix the crushed pretzels with salt and pepper.
  3. In another bowl, place the flour. In a third bowl, whisk the eggs.
  4. Dip each chicken breast in flour, then egg, and finally in the pretzel mixture to coat.
  5. Place the coated chicken on a baking sheet lined with parchment paper.
  6. Spray the chicken with cooking spray and bake for 20-25 minutes or until cooked through.
  7. In a small bowl, mix the Dijon mustard and mayonnaise to create the sauce.
  8. Serve the pretzel chicken hot with the mustard-cheddar sauce drizzled on top.

Notes

Store leftovers in an airtight container in the refrigerator and use within 2-3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
