Spinach and Ricotta Stuffed Shells

Comforting stuffed pasta shells filled with ricotta, spinach, and topped with marinara sauce and melted mozzarella.

  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 1 cup spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions until al dente, then drain.
  3. In a bowl, combine ricotta cheese, chopped spinach, 1/2 cup mozzarella cheese, Parmesan cheese, egg, salt, and pepper.
  4. Fill each pasta shell with the cheese and spinach mixture.
  5. Spread 1 cup of marinara sauce on the bottom of a greased baking dish.
  6. Place the stuffed shells on top of the sauce, then pour the remaining marinara sauce over the shells.
  7. Sprinkle the rest of the mozzarella cheese on top.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly.
  10. Let it cool for a few minutes before serving.

Notes

You can make the filling ahead and chill it or use frozen spinach that you thaw and squeeze dry.
