Street Corn Creamy Cucumber Chicken Salad

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. In a large mixing bowl, combine the diced chicken, sweet corn, diced cucumber, and finely chopped red onion.
  2. In a separate bowl, whisk together the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper until well blended.
  3. Pour the creamy dressing over the salad ingredients and mix gently until everything is well coated.
  4. Taste and adjust the seasoning if necessary.
  5. If you like, sprinkle crumbled feta cheese on top for an extra touch.
  6. Chill in the fridge for about 30 minutes to let the flavors meld before serving.

Notes

For added crunch, include chopped bell peppers or radishes. Can substitute chicken with chickpeas for a vegetarian version.
