Taco Stuffed Sweet Potatoes

Deliciously baked sweet potatoes filled with savory taco filling, a perfect blend of flavors and textures.

  • 4 medium sweet potatoes
  • 1 pound ground turkey or beef
  • 1 taco seasoning packet
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream and green onions for topping

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for 45-60 minutes until tender.
  3. In a skillet, brown the ground meat over medium heat.
  4. Add taco seasoning, black beans, corn, and salsa; stir to combine and heat through.
  5. Once the sweet potatoes are cooked, slice them open and fluff the insides with a fork.
  6. Spoon the taco mixture into the sweet potatoes.
  7. Top with shredded cheese and return to the oven for about 5 minutes until the cheese melts.
  8. Serve with sour cream and green onions on top.

Notes

Make sure to pierce the sweet potatoes before baking to allow steam to escape. Experiment with different proteins or veggies.
