Tangy Honey Lime Chicken & Avocado Rice Stack

A vibrant and flavorful dish combining zesty honey lime chicken with creamy avocado and hearty rice.

  • 4 pieces Chicken Breasts (boneless, skinless)
  • 3 tablespoons Honey (for marinade)
  • 2 tablespoons Lime Juice (freshly squeezed)
  • 1 tablespoon Lime Zest
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Cumin
  • to taste Salt
  • to taste Pepper
  • 1 cup Jasmine Rice (or basmati)
  • 2 cups Chicken Broth
  • 2 pieces Avocado (diced)
  • 1 small Red Onion (finely chopped)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges (for garnish)

Instructions

  1. In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Mix well.
  2. Add the chicken breasts to the bowl and coat them with the marinade. Allow to marinate for at least 30 minutes.
  3. While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rice and chicken broth. Bring to a boil, then reduce to a simmer and cover. Cook for about 15-20 minutes, or until the rice is tender.
  4. Fluff the cooked rice with a fork and set aside.
  5. Heat olive oil in a skillet or on a grill over medium heat. Cook the marinated chicken breasts for 6-8 minutes on each side, or until cooked through.
  6. Remove the chicken from heat, let rest for a few minutes, then slice into strips.
  7. To assemble the stacks, layer rice at the bottom, followed by sliced chicken, diced avocado, chopped red onion, and cilantro. Repeat the stacking for presentation.

Notes

Adjust the sweetness by modifying honey levels. For spice, add diced jalapeños.
