Thai-Inspired Coconut Poached Fish

A delicious and light Thai-inspired dish featuring firm white fish poached in a creamy coconut broth with fresh herbs and spices.

  • 4 fillets firm white fish (halibut or cod)
  • 1 teaspoon kosher salt
  • 2 tablespoons neutral cooking oil
  • 1 medium white onion, chopped
  • 3 cloves garlic, minced
  • 2 inches fresh ginger, sliced
  • 1 piece serrano or Thai chile
  • 1 can coconut milk
  • 2 cups seafood stock
  • 1 tablespoon fish sauce
  • 1 teaspoon granulated sugar
  • 1 lime, zested and juiced
  • 2 cups fresh spinach
  • 1/4 cup fresh cilantro, chopped
  • 2 scallions, sliced
  • To taste chili oil or chili crisp (optional)
  • 2 cups jasmine rice

Instructions

  1. Season the fish fillets with kosher salt on both sides and set aside.
  2. Heat the neutral cooking oil in a large pot over medium heat.
  3. Add the chopped white onion and sauté until soft and translucent, about 5 minutes.
  4. Stir in minced garlic, ginger, and chile; cook for an additional 2 minutes.
  5. Pour in the coconut milk and seafood stock; add fish sauce and sugar, whisking to combine.
  6. Bring to a gentle simmer and gently place the seasoned fish fillets in the pot.
  7. Cover and poach for about 8-10 minutes, until the fish is cooked through and flakes easily.
  8. Add fresh spinach in the last few minutes of cooking until wilted.
  9. Remove from heat and stir in lime zest and juice.
  10. Serve over jasmine rice with broth, garnished with cilantro, scallions, and a drizzle of chili oil or chili crisp.

Notes

For best flavor, let the dish sit for a few minutes after cooking. Use a thermometer to ensure fish is cooked perfectly.
